  • 1 can (15 oz) chickpeas, drained and rinsed

  • 3 tbsp freshly squeezed lemon juice

  • Salt and pepper to taste

Instructions

  1. Preheat oven to 400°F (200°C). Wrap beets in foil with olive oil and salt; roast for 45-60 minutes until tender.
  2. Once cooled, peel the beets and chop them into smaller chunks.
  3. In a food processor, combine chopped beets, chickpeas, tahini, lemon juice, garlic, salt, and pepper. Blend until smooth.
  4. With the processor running, drizzle in olive oil until you achieve your desired creaminess. Adjust seasoning if needed.
