  • 1 cup diced butternut squash
  • 1 medium Honeycrisp apple, chopped

  • 3 tbsp extra virgin olive oil
  • 2 tbsp cider vinegar
  • 1 tbsp honey or maple syrup
  • Salt and pepper to taste

Instructions

  1. 1. Cook the pasta al dente according to package instructions. Drain and rinse under cold water.
  2. 2. Preheat oven to 400°F (200°C). Toss diced butternut squash with olive oil, salt, and pepper. Roast on a baking sheet until tender and golden brown (about 20 minutes).

  4. 4. Whisk together olive oil, cider vinegar, honey/maple syrup, salt, and pepper in a small bowl.
