  • 6 cups low-sodium vegetable broth
  • 1 can (15 oz) kidney beans, drained
  • ½ cup ditalini pasta
  • ½ cup fresh basil, chopped
  • Salt & pepper to taste

Instructions

  1. In a large pot over medium heat, heat olive oil. Add onions, carrots, and celery; sauté until softened.
  2. Stir in garlic and zucchini; cook for another two minutes until fragrant.
  3. Add diced tomatoes and vegetable broth; bring to a boil while stirring occasionally.
  4. Once boiling, add kidney beans and ditalini pasta. Reduce heat and simmer uncovered for about 10-12 minutes until pasta is tender.
  5. Stir in fresh basil before serving; season with salt and pepper as needed.
