  • 4 cups low-sodium beef broth

  • 1 tsp dried thyme
  • 1 tsp smoked paprika

  4. Stir in pumpkin puree and beef broth, scraping up any browned bits from the bottom of the pot. Bring to a boil.
  5. Return the beef to the pot, reduce heat to low, cover tightly, and simmer for about 1.5 hours until beef is tender.
