  • 1 medium onion, diced
  • 2 medium carrots, chopped
  • 2 stalks celery, chopped
  • 3 cloves garlic, minced
  • 1 (14.5 oz) can diced tomatoes
  • 4 cups vegetable broth
  • 2 tsp olive oil
  • 1 tsp cumin
  • 1 tsp smoked paprika
  • 2 bay leaves
  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions until translucent (about 5 minutes).
  2. Add carrots and celery; cook for another 3–4 minutes until slightly softened.
  3. Stir in minced garlic, then add rinsed lentils and diced tomatoes with their juices.
  4. Pour in vegetable broth, followed by cumin, paprika, bay leaves, salt, and pepper. Bring to a gentle boil.
  5. Reduce heat to low and simmer for 25–30 minutes until lentils are tender but not mushy. Remove bay leaves before serving.
  6. Serve hot; garnish with fresh herbs if desired.
