  • 1 lb fresh cremini or shiitake mushrooms, cleaned and sliced
  • 1 medium yellow onion, diced
  • 3 garlic cloves, minced
  • 4 cups low-sodium vegetable broth
  • 1 cup heavy cream (or coconut cream for dairy-free)
  • 2 sprigs fresh thyme (or 1 tsp dried thyme)
  • 2 tbsp unsalted butter
  • Salt and pepper to taste

Instructions

  1. In a large pot, melt butter over medium heat. Add diced onions and sauté until translucent (about 5 minutes).
  2. Stir in minced garlic and sliced mushrooms; cook until mushrooms are tender and golden brown.
  3. Pour in vegetable broth and add thyme. Bring to a gentle simmer for 20 minutes.
  4. Remove from heat; blend until smooth using an immersion blender or regular blender.
  5. Return to low heat, stir in cream, season with salt and pepper, and warm for another 5 minutes without boiling.
  6. Serve garnished with fresh thyme or a drizzle of cream.
