Instructions

  1. Wash and chop the dill, potatoes, carrots, and onion into small pieces.
  2. In a large pot over medium heat, add a splash of olive oil. Sauté the chopped onion until translucent (about 3-4 minutes).
  3. Add the diced potatoes and carrots; cook together for an additional 5 minutes.
  4. Pour in the vegetable broth and bring to a simmer.
