  • 4 cups chicken broth
  • 2 tbsp fresh thyme, chopped
  • 2 tbsp fresh parsley, chopped

Instructions

  1. In a large pot, heat 2 tbsp olive oil over medium heat. Sauté the onions, celery, and carrots until softened (about 5 minutes).
  2. Add the diced potatoes and chicken broth; bring to a gentle boil while stirring occasionally.
  3. Reduce heat to simmer; add the seafood medley and cook until shrimp turns pink and fish flakes easily (5-7 minutes).
  4. Stir in heavy cream; season with salt and pepper. Let it bubble gently for another 3-5 minutes until slightly thickened.
