Seafood chowder is a comforting dish that brings together the fresh flavors of the ocean in a rich, creamy base.

  • 1 lb fresh seafood mix (shrimp, clams, fish)
  • 2 medium Yukon Gold potatoes, cubed
  • 1 large sweet onion, diced
  • 3 garlic cloves, minced
  • 1 cup heavy cream (or half-and-half)
  • 4 cups low-sodium vegetable broth
  • 2 tsp fresh thyme
  • 1 tbsp lemon juice
  • Salt and pepper to taste

Instructions

  1. In a large pot over medium heat, sauté diced onions and minced garlic in 2 tablespoons olive oil until fragrant.
  2. Add cubed potatoes and vegetable broth; bring to a gentle simmer for about 10 minutes until potatoes are tender.
  3. Gently fold in the seafood mix along with thyme, salt, and pepper. Cook for another 5-7 minutes until the seafood is opaque.
  4. Stir in the heavy cream and simmer for an additional 5 minutes.
  5. Finish with a squeeze of lemon juice before serving; garnish with extra thyme or parsley as desired.
