  • 34 boneless, skinless chicken breasts
  • 45 cloves fresh garlic, minced
  • 1 cup low-sodium chicken broth
  • 1 cup heavy cream
  • 1 cup long-grain white rice
  • 2 tbsp low-sodium soy sauce
  • 12 tsp dried thyme
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C) and coat an oven-safe skillet with nonstick cooking spray.
  2. Season chicken breasts with salt and pepper. Sear in the skillet over medium heat for about 5 minutes on each side until golden brown. Remove from skillet.
  3. In the same skillet, sauté minced garlic until fragrant. Add chicken broth and soy sauce; stir to combine.
  4. Lower heat and mix in heavy cream and dried thyme. Let simmer for 5 minutes.
  5. Return seared chicken to the skillet, spooning sauce over it.
  6. Bake in the preheated oven for 25 minutes or until chicken reaches an internal temperature of 165°F (75°C).
  7. Serve over cooked rice, drizzling extra sauce on top if desired.
