  • 2 large eggs

Instructions

  1. Preheat oven to 375°F (190°C).
  2. Sauté chopped spinach in a skillet over medium heat until wilted (about 3 minutes).
  3. Cook fresh salmon in the same skillet until flaky (5-7 minutes) or flake canned salmon.
  4. In a bowl, combine flaked salmon, cooked spinach, breadcrumbs, feta cheese, garlic, lemon juice, eggs, herbs, salt, and pepper. Mix well without overmixing.
  5. Form mixture into patties about 2 inches wide and place on a parchment-lined baking sheet.
  6. Bake for 20-25 minutes until golden brown and crispy; flip halfway through for even browning.
