  • 2 medium carrots, diced
  • 2 stalks celery, diced

  • 1 can (14.5 oz) diced tomatoes
  • 4 cups low-sodium vegetable broth
  • 2 cups spinach or kale, chopped
  • 1 tsp ground cumin
  • 1 tsp smoked paprika
  • Juice of 1 lemon
  • 2 tbsp olive oil

Instructions

  1. In a large pot, heat olive oil over medium heat. Sauté onions until translucent (about 5 minutes). Add garlic and cook for another minute.
  2. Stir in carrots and celery; sauté for 3-4 minutes until softened.
  3. Add rinsed lentils and diced tomatoes (with juice) to the pot; mix well.
  4. Pour in vegetable broth and season with cumin and paprika. Bring to a boil, then reduce heat and simmer for 25-30 minutes until lentils are tender.
  5. Stir in spinach or kale until wilted. Squeeze lemon juice before serving.
