  • 4 large bell peppers (red, yellow, or green)
  • 1 lb lean ground beef
  • 1 cup cooked rice
  • 1 medium onion, chopped
  • 1 can (14.5 oz) diced tomatoes
  • 1 cup shredded cheese (cheddar or mozzarella)
  • 1 tsp garlic powder
  • 1 tsp Italian seasoning
  • Salt to taste

Instructions

  1. Preheat your oven to 375°F (190°C). Lightly spray a baking dish with nonstick cooking spray.
  2. Slice the tops off the bell peppers and remove seeds.
  3. In a skillet over medium heat, brown the ground beef and chopped onion until no longer pink (about 5-7 minutes). Drain excess fat.
  4. Stir in cooked rice, diced tomatoes, garlic powder, Italian seasoning, and salt until well combined.
  5. Stuff each pepper generously with the filling and place them upright in the baking dish.
  6. Cover with foil and bake for about 30 minutes. Remove foil during the last five minutes to sprinkle cheese on top until melted.
