  • 2 tbsp extra virgin olive oil
  • 1 tsp dried thyme (or 2 sprigs fresh thyme)
  • 1 bay leaf
  • Juice of 1 lemon
  • Salt & pepper to taste

Instructions

  3. Stir in white beans and vegetable broth. Add thyme, bay leaf, salt, and pepper. Bring to a gentle simmer.
  4. Simmer uncovered for about 30 minutes until thickened slightly, stirring occasionally.
  5. Before serving, stir in lemon juice and remove bay leaf.
