  • 1 cup diced cucumbers
  • 1 cup Greek yogurt
  • 8 large romaine or butter lettuce leaves

  • 1 tsp cumin or paprika
  • Juice of 2 lemons
  • 2 tbsp extra virgin olive oil

Instructions

  2. Once cooled, shred the chicken using two forks.

  4. In another bowl, whisk together Greek yogurt, lemon juice, olive oil, salt, pepper, and spices until smooth.
  5. Pour the dressing over the chicken mixture and stir until well combined.
  6. Spoon the mixture into lettuce leaves and roll them up tightly.
