  • 3 tbsp extra virgin olive oil
  • 2 cloves garlic, minced
  • 1/2 cup grated Parmesan cheese

Instructions

  1. Boil salted water in a large pot. Add pasta and cook according to package instructions until al dente. Reserve 1/2 cup pasta water before draining.
  2. In a large skillet over medium heat, heat olive oil. Add minced garlic; sauté for 30 seconds until fragrant. Add zucchini and bell peppers; cook until slightly tender.
  3. Stir in cherry tomatoes along with salt and pepper. Cook for about 3-4 minutes until tomatoes soften.
  4. Combine drained pasta with vegetables in the skillet. Gradually add reserved pasta water while tossing everything together until well combined.
  5. Remove from heat; stir in fresh basil and grated Parmesan until evenly coated.
