  1. Preheat oven to 425°F (220°C). Chop carrots, sweet potatoes, parsnips, and onion into chunky pieces.
  2. In a large bowl, combine chopped vegetables with minced garlic, olive oil, salt, and pepper. Toss well.
  3. Spread veggies evenly on a baking sheet and roast for 30-35 minutes until tender and caramelized.
  4. Transfer the roasted vegetables to a large pot and pour in vegetable broth. Add thyme and rosemary; simmer for 10 minutes.
  5. Using an immersion blender or regular blender, puree the soup until smooth or leave slightly chunky if preferred.
