  • 3 lbs bone-in beef chuck roast
  • 4 dried guajillo chiles, stems and seeds removed
  • 1 tbsp cumin seeds
  • 6 garlic cloves
  • 1 medium onion, roughly chopped
  • 4 cups low-sodium beef broth

Instructions

  1. Toast guajillo chiles in a dry skillet over medium heat for 1-2 minutes until fragrant.
  2. In a blender, combine toasted chiles, garlic, onion, cumin seeds, and 1 cup of beef broth. Blend until smooth.
  3. Sear the beef chuck roast in a heavy pot over medium-high heat until browned on all sides.
  4. Pour the blended sauce over the meat, add remaining beef broth, bring to a simmer, cover, and cook on low for about 3 hours until tender.
  5. Shred the meat with forks and return it to the broth before serving.
