  • 2 cups penne pasta
  • 2 tbsp olive oil
  • 4 cloves garlic, minced
  • 1 (28 oz) can crushed tomatoes
  • 2 cups shredded mozzarella cheese
  • 1/2 cup grated Parmesan cheese
  • Salt and pepper to taste
  • Fresh basil or oregano (optional)

Instructions

  1. Preheat your oven to 375°F (190°C). Spray a baking dish with nonstick cooking spray.
  2. Cook the penne pasta in salted boiling water according to package instructions until al dente (about 8–10 minutes). Drain without rinsing.
  3. In the same pot, heat olive oil over medium heat and sauté minced garlic until fragrant. Add crushed tomatoes and season with salt and pepper (and herbs if desired); stir well.
  4. Combine cooked pasta with the sauce mixture, then fold in half of the mozzarella cheese.
  5. Transfer everything into the prepared baking dish. Top with remaining mozzarella and sprinkle Parmesan on top.
  6. Bake for 25–30 minutes or until golden brown and bubbly. Let cool slightly before serving.
