Ingredients

Scale
  • 4 boneless, skinless chicken breasts
  • 2 large fresh oranges (zested and juiced)
  • 2 chipotle peppers in adobo sauce (finely chopped)
  • 2 tbsp raw honey
  • 4 cloves garlic (minced)
  • 2 tbsp freshly squeezed lime juice
  • 3 tbsp extra virgin olive oil
  • Salt and pepper to taste
  • 1/4 cup low-sodium soy sauce
  • Fresh cilantro for garnish (optional)

Instructions

  1. In a mixing bowl, zest and juice the oranges. Add lime juice, chopped chipotle peppers, honey, minced garlic, olive oil, soy sauce, salt, and pepper. Mix well to create the marinade.
  2. Place chicken breasts in a zip-top bag or bowl. Pour the marinade over the chicken and seal or cover tightly. Marinate in the fridge for at least 30 minutes or overnight for more flavor.
  3. Preheat your grill or oven to medium-high heat (375°F). Remove chicken from marinade and grill for 6-7 minutes on each side until fully cooked (internal temperature should reach 145°F). Baste with reserved marinade halfway through grilling.
  4. Once cooked, let the chicken rest for 5 minutes before slicing. Garnish with fresh cilantro if desired.
