  • 1 cup shredded cheddar cheese
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Cut tops off bell peppers and remove seeds; place upright in a baking dish.
  2. Cook pasta according to package instructions until al dente; drain and set aside.
  3. In a skillet over medium heat, brown the ground meat for about 5-7 minutes. Drain excess fat.
  4. Stir in chili powder, cumin, garlic powder, onion powder, diced tomatoes (with juice), and chili beans. Simmer for 5 minutes.
  5. Mix in cooked pasta until evenly coated; season to taste.
  6. Stuff each pepper with the meat mixture and top with shredded cheddar cheese. Bake uncovered for 25-30 minutes until peppers are tender and cheese is bubbly.
