  • 2 tbsp taco seasoning
  • 1 can (15 oz) black beans, rinsed
  • 1 cup diced tomatoes
  • 1 cup chopped lettuce
  • 1 avocado, sliced
  • Juice of 1 lime
  • 1 cup shredded cheese (cheddar or Mexican blend)
  • ½ cup sour cream or Greek yogurt

Instructions

  1. Rinse the rice under cold water until clear. In a medium pot, combine rice with 2 cups water, bring to a boil, then reduce heat and simmer covered for 18 minutes until fluffy.
  2. In a skillet over medium-high heat, brown the meat until cooked through. Drain excess fat, then add taco seasoning and ¼ cup water; simmer for 5 minutes.
  3. Stir in rinsed black beans and warm through.
