  • 1 ½ cups graham cracker crumbs
  • ½ cup unsalted butter, melted
  • 2 cups whole milk ricotta cheese, drained
  • 8 oz cream cheese, softened
  • ¾ cup granulated sugar
  • 2 tsp pure vanilla extract
  • ½ cup mini chocolate chips
  • 3 large eggs, at room temperature
  • Chopped pistachios (optional, for garnish)

Instructions

  1. Preheat oven to 350°F (175°C). In a bowl, mix graham cracker crumbs with melted butter until moistened. Press into the bottom of a springform pan.
  2. In another bowl, beat ricotta and cream cheese until smooth. Add sugar and vanilla; mix until combined.
  3. Fold in chocolate chips and add eggs one at a time, mixing gently until just incorporated.
  4. Pour filling over crust and bake for 50-60 minutes until set but slightly jiggly in the center.
  5. Allow to cool at room temperature before refrigerating for at least four hours or overnight.
