Ingredients

Scale
  • 2 cups cake flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1/2 cup unsalted butter (softened)
  • 3 large eggs
  • 1 cup whole milk
  • 2 tsp pure vanilla extract
  • 1 cup heavy whipping cream (cold)
  • 1/4 cup powdered sugar
  • 1 tsp vanilla bean paste or seeds (optional)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and line with parchment paper.
  2. In a medium bowl, whisk together cake flour, baking powder, and a pinch of salt.
  3. In a large mixing bowl, cream softened butter and granulated sugar until light and fluffy (about 3-4 minutes).
  4. Add eggs one at a time, mixing well after each addition; then stir in the vanilla extract.
  5. Gradually mix in half of the dry ingredients followed by milk; then add remaining dry ingredients until just combined—avoid overmixing.
  6. Divide batter into prepared pans and bake for 25-30 minutes or until a toothpick comes out clean. Let cool for 10 minutes before transferring to wire racks.
  7. For the chantilly cream, whip heavy cream until soft peaks form; gradually add powdered sugar and optional vanilla bean paste until stiff peaks appear.
  8. Once cakes are completely cooled, layer them with chantilly cream between layers and on top.
