  • 1 cup granulated sugar (200g)
  • 1/2 cup brown sugar (100g)
  • 3 large eggs
  • 1 cup all-purpose flour (125g)
  • 1/2 cup cocoa powder (50g)
  • 1 cup Mini Eggs (150g)

Instructions

  1. Preheat your oven to 350°F (175°C) and line a baking pan with parchment paper.
  2. In a medium saucepan over low heat, melt the butter. Remove from heat and stir in granulated sugar and brown sugar until combined.
  3. Allow the mixture to cool slightly before whisking in the eggs one at a time until fully incorporated.
  4. In another bowl, sift together flour, cocoa powder, and a pinch of salt. Gently fold this mixture into the wet ingredients until just combined.
  5. Fold in half of the Mini Eggs into the batter, then pour into the prepared baking pan and sprinkle remaining Mini Eggs on top.
  6. Bake for 25-30 minutes or until a toothpick comes out with moist crumbs. Cool slightly before slicing.
