Ingredients

Scale
  • 1 ½ cups all-purpose flour
  • 1 cup granulated sugar
  • 2 tsp baking powder
  • 1 cup pumpkin puree
  • 4 oz cream cheese (softened)
  • 2 large eggs
  • 1 tsp cinnamon
  • ½ tsp nutmeg
  • ½ cup brown sugar (for streusel)
  • ¼ cup unsalted butter (melted, for streusel)
  • ½ cup milk

Instructions

  1. Preheat your oven to 350°F (175°C) and grease a muffin tin or line it with paper liners.
  2. In a small bowl, mix together brown sugar, flour, cinnamon, and melted butter for the streusel topping until crumbly; set aside.
  3. In a large bowl, whisk together flour, baking powder, cinnamon, nutmeg, and salt.
  4. In another bowl, blend sugar and cream cheese until smooth. Add eggs one at a time followed by pumpkin puree and milk; mix until combined.
  5. Gradually fold dry ingredients into wet ingredients until just combined; do not overmix.
  6. Fill muffin cups halfway with batter. Add about one tablespoon of cream cheese filling before topping off with more batter.
  7. Sprinkle streusel mixture generously over each muffin cup.
  8. Bake for 20-25 minutes or until golden brown and a toothpick inserted comes out clean.
