  • 1 ½ cups digestive biscuits (crushed)
  • ½ cup unsalted butter (melted)
  • 16 oz full-fat cream cheese (softened)
  • 1 cup full-fat sour cream
  • ¾ cup powdered sugar
  • 1 ½ cups mixed fresh berries (strawberries, blueberries, raspberries)
  • 2 tbsp lemon juice
  • 1 tbsp gelatin powder (bloomed in water)

Instructions

  1. Preheat oven to 350°F (175°C). Crush biscuits into fine crumbs and mix with melted butter until combined.
  2. Press the mixture into the bottom of an 8-inch springform pan. Bake for 10 minutes until golden brown.
  3. Beat softened cream cheese in a large bowl until smooth. Gradually add powdered sugar and sour cream, mixing until well combined.
  4. Stir in lemon juice and bloomed gelatin; ensure the mixture is smooth.
  5. Divide filling into three bowls; fold fresh berries into each bowl separately.
  6. Spread the strawberry layer over the crust, followed by the blueberry layer, and finally the raspberry layer, smoothing each out.
  7. Cover with plastic wrap and refrigerate overnight or at least four hours until set.
