Instructions

  2. In a large bowl, whisk together flour, baking powder, cinnamon, granulated sugar, and brown sugar until fluffy.
  3. In another bowl, combine melted butter, eggs, milk, and vanilla extract. Mix until smooth.
  4. Fold diced apples into the wet mixture.
  5. Gradually add the wet mixture to the dry ingredients and gently fold until just combined to keep muffins fluffy.
  6. Spoon the batter into muffin tins, filling each about two-thirds full. Bake for 18-20 minutes or until golden brown and a toothpick inserted comes out clean.
