  • 4 cloves garlic, minced
  • 1 red bell pepper, diced
  • 1 green bell pepper, diced
  • 14 oz can diced tomatoes with green chilies
  • 2 tbsp chili powder
  • 1 tsp ground cumin
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 2 cups beef broth
  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté onions until translucent; add garlic and stir until fragrant.
  2. Increase heat slightly and add ground beef. Cook until browned, breaking it up as it cooks.
  3. Stir in chili powder and cumin; cook briefly to release flavors.
  4. Add canned tomatoes, kidney beans, bell peppers, and beef broth. Mix well.
  5. Bring to a gentle boil, then reduce heat and simmer for at least 30 minutes for flavors to meld.
