Ingredients

Scale

  • 1 cup BBQ sauce (your favorite flavor)
  • 4 cups chopped romaine lettuce
  • 1 cup halved cherry tomatoes
  • 1 medium cucumber, diced
  • ½ red onion, thinly sliced
  • 1 cup shredded cheddar cheese
  • ¼ cup chopped cilantro or parsley
  • 2 tbsp olive oil
  • juice of 1 lime

Instructions

  1. Preheat grill or skillet over medium-high heat. Season chicken breasts with salt and pepper and cook for 6-7 minutes on each side until fully cooked.
  2. In the last few minutes of cooking, brush BBQ sauce on both sides of the chicken to caramelize.
  3. Remove chicken from heat and let it rest. Meanwhile, chop romaine lettuce, cherry tomatoes, cucumber, and slice red onion.
  4. Shred cooled chicken with two forks and combine with chopped vegetables in a large bowl.
  5. Add shredded cheddar cheese and drizzle with olive oil and lime juice. Toss everything together until well coated.
  6. Garnish with fresh cilantro or parsley before serving.

Nutrition

Keywords: For added flavor, marinate the chicken overnight in BBQ sauce. Substitute grilled shrimp or tofu for a different protein option. Keep dressing separate if making ahead to maintain freshness.
