  • 2 lbs chuck roast
  • 4 dried guajillo chiles
  • 1 medium yellow onion (chopped)
  • 4 cloves garlic (minced)
  • 2 tsp ground cumin
  • 1 tsp Mexican oregano
  • 8 corn tortillas
  • 2 limes (juiced)
  • 4 cups beef broth
  • 2 bay leaves
  • Salt and pepper to taste

Instructions

  1. Cut the chuck roast into large chunks and sear in a heavy pot with oil over medium-high heat until browned on all sides.
  2. Blend softened guajillo chiles, onion, garlic, cumin, oregano, salt, pepper, and beef broth until smooth.
  3. Pour the spice paste over the seared meat, add enough beef broth to cover, and toss in bay leaves. Stir well.
  4. Bring to a boil; reduce heat to low and simmer for about 3 hours until the meat is tender.
  5. Shred the meat in the pot and warm corn tortillas on a skillet.
  6. Assemble tacos with shredded beef, diced onions, cilantro, and fresh lime juice. Serve with consomé for dipping.
