Ingredients

Scale
  • 2 lbs chuck roast
  • 4 dried guajillo peppers
  • 2 dried ancho peppers
  • 1 large onion, chopped
  • 4 garlic cloves
  • 2 tsp cumin powder
  • 1 tsp dried oregano
  • 2 bay leaves
  • 6 corn tortillas
  • Fresh cilantro for garnish

Instructions

  1. Prepare the Broth: Boil water in a pot. Remove stems and seeds from guajillo and ancho peppers. Add to boiling water and simmer for 10-15 minutes until soft.
  2. Make the Spice Mix: Blend softened peppers, onion, garlic, cumin, oregano, bay leaves, and salt until smooth.
  3. Cook the Meat: Sear the chuck roast in a large pot over medium-high heat until browned on all sides.
  4. Combine Ingredients: Pour spice mix over the meat and add enough beef broth or water to cover by an inch. Bring to boil, reduce heat to low, cover, and simmer for about 3 hours until tender.
  5. Shred the Meat: Remove meat from pot once fork-tender and shred into bite-sized pieces.
  6. Assemble Your Tacos: Warm tortillas on a skillet. Fill each with shredded beef and dip into consomme before serving. Garnish with fresh cilantro.
