  • 2 tsp fresh thyme (or 1 tsp dried)
  • 2 bay leaves
  • 2 tbsp olive oil

Instructions

  1. Preheat your oven to 325°F (160°C).
  2. Chop onions, carrots, and celery into even pieces; mince garlic.
  3. In a large Dutch oven over medium-high heat, add olive oil until shimmering. Sear each side of the short ribs for about 3-4 minutes until golden brown. Remove from pot.
  4. Add onions and garlic to the pot and sauté until fragrant (about 5 minutes).
  5. Deglaze the pot with red wine, scraping up browned bits; let simmer for 2-3 minutes.
  6. Return short ribs to the pot along with carrots, celery, thyme, bay leaves, and beef broth. Bring to a gentle simmer.
  7. Cover and transfer to the oven; braise for about 3 hours until fork-tender.
