  • 4 boneless, skinless chicken breasts (diced)
  • 1 cup long-grain white rice (uncooked)
  • 2 cups shredded sharp cheddar cheese
  • 1 can (10.5 oz) cream of chicken soup
  • 1 cup low-sodium chicken broth
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 1 cup frozen mixed vegetables
  • Salt and pepper to taste

Instructions

  1. Preheat your oven to 350°F (175°C).
  2. Spray a 9×13 inch baking dish with nonstick cooking spray.
  3. In a large bowl, mix together uncooked rice, cream of chicken soup, chicken broth, onion powder, garlic powder, salt, and pepper until well combined.
  4. Fold in diced chicken and frozen mixed vegetables until evenly coated.
  5. Transfer half the mixture to the prepared baking dish; sprinkle with half of the cheddar cheese. Add the remaining mixture and top with the rest of the cheese.
  6. Cover with foil and bake for 45 minutes. Remove foil during the last 10 minutes to allow cheese to brown.
