Ingredients

Scale
  • 4 boneless, skinless chicken breasts (about 1.5 lbs)
  • 4 cloves fresh garlic, minced
  • 1/4 cup extra virgin olive oil
  • 1/4 cup freshly squeezed lemon juice
  • 1/4 cup chopped fresh parsley
  • 2 tsp dried oregano
  • Salt and pepper to taste
  • Zest of 1 lemon
  • 1/2 tsp red pepper flakes (optional)

Instructions

  1. In a bowl, whisk together olive oil, lemon juice, minced garlic, parsley, oregano, salt, pepper, and red pepper flakes until well combined.
  2. Place chicken breasts in a resealable bag or shallow dish; pour marinade over chicken. Seal or cover tightly and refrigerate for at least 30 minutes (up to 4 hours).
  3. Preheat grill to medium-high heat or oven to 400°F (200°C). Lightly oil grill grates if grilling.
  4. Grill chicken for about 6-7 minutes per side until golden brown and internal temperature reaches 165°F (74°C). For baking, place chicken on a baking sheet and cook for about 20-25 minutes.
  5. While chicken cooks, simmer remaining marinade in a small saucepan over medium heat for about 5-7 minutes until slightly thickened.
  6. Once cooked, allow chicken to rest briefly before drizzling with warm sauce and garnishing with extra parsley.
