  • 34 boneless, skinless chicken breasts (about 1.5 lbs)
  • 2 medium fresh zucchinis, sliced
  • 1 medium sweet onion, diced
  • 3 cloves garlic, minced
  • 1 cup sharp cheddar cheese, shredded (divided)
  • 1 can (10.5 oz) cream of mushroom soup
  • ½ cup whole milk
  • 2 tsp Italian seasoning

Instructions

  1. Preheat the oven to 375°F (190°C) and grease a baking dish.
  2. In a skillet over medium heat, cook chopped chicken until golden brown and fully cooked (165°F internal temperature).
  3. Add diced onion and minced garlic to the skillet; sauté until translucent.
  4. In a large bowl, combine the cooked chicken, sliced zucchini, cream of mushroom soup, milk, Italian seasoning, and half of the cheese.
  5. Pour the mixture into the prepared baking dish and top with remaining cheese.
  6. Bake for 30-35 minutes or until bubbly and golden brown.
