Instructions

  1. Preheat the oven to broil (500°F). Spread green chilies on a baking sheet and roast until charred (10-12 minutes). Place in a sealed bag for 5 minutes to loosen skins.
  2. Season chicken breasts with salt and pepper. In a large pot over medium heat, add oil and sear chicken until golden brown (3-4 minutes per side). Remove from pot and let rest.
  3. Sauté chopped onion and minced garlic in the same pot until fragrant (about 5 minutes).
  4. Peel and chop roasted chilies, then add them to the pot along with diced tomatoes if desired.
  5. Return seared chicken to the pot, add chicken broth, bring to boil, then reduce heat and simmer for 20 minutes.
  6. Shred the chicken using two forks and return it to the soup. Adjust seasoning with salt and pepper. Serve hot with cilantro and lime wedges.
