  • 1 cup all-purpose flour
  • 1/2 cup unsweetened cocoa powder
  • 2 tsp baking powder
  • 1 cup granulated sugar
  • 1/2 cup brown sugar
  • 1/3 cup vegetable oil
  • 2 large eggs
  • 1 tsp vanilla extract
  • 1/4 cup powdered sugar (for rolling)

Instructions

  1. Preheat your oven to 350°F (175°C) and line baking sheets with parchment paper.
  2. In a bowl, whisk together flour, cocoa powder, baking powder, and salt until combined.
  3. In another bowl, mix granulated sugar, brown sugar, and vegetable oil until smooth. Add eggs one at a time, mixing well after each addition, then stir in vanilla extract.
  4. Gradually combine the dry ingredients with the wet mixture until just mixed; do not overmix.
  5. Chill the dough in the refrigerator for at least 30 minutes to prevent spreading during baking.
  6. Roll chilled dough into balls and coat each ball generously in powdered sugar.
  7. Place on prepared baking sheets about two inches apart and bake for 10-12 minutes. The tops should appear slightly cracked but remain soft inside.
  8. Let cool before enjoying!
