  • 1 cup buttermilk
  • 1/2 cup vegetable oil
  • 2 tsp vanilla extract
  • 1 cup heavy cream (for ganache)
  • 8 oz semi-sweet chocolate chips (for ganache)

Instructions

  1. Preheat your oven to 350°F (175°C). Grease two 9-inch round cake pans and line with parchment paper.
  2. In a large bowl, whisk together flour, cocoa powder, sugar, baking soda, baking powder, and salt until combined.
  3. In another bowl, mix eggs, buttermilk, vegetable oil, and vanilla extract. Combine with dry ingredients until just mixed.
  4. Divide batter evenly between prepared pans and bake for 30-35 minutes or until a toothpick comes out clean.
  5. For ganache, heat heavy cream until hot but not boiling; pour over chocolate chips and let sit for 5 minutes before stirring until smooth.
  6. Once cakes are completely cooled, layer them on a serving plate with ganache in between. Pour remaining ganache over the top allowing it to drip down the sides.
