  • 1 can (15 oz) whole kernel corn, drained
  • 1 can (15 oz) black beans, rinsed and drained
  • 1 cup diced bell peppers (mixed colors)
  • 1 cup fine cornmeal
  • 1 cup milk
  • 2 large eggs
  • 1 cup sour cream (or Greek yogurt)
  • 1.5 cups shredded cheddar cheese (divided)
  • 2 tsp chili powder
  • 1 tsp cumin
  • Salt and pepper to taste

Instructions

  1. Preheat oven to 375°F (190°C). Grease a 9×13-inch baking dish.
  2. In a skillet over medium heat, brown the ground beef until fully cooked. Add bell peppers and cook for another 5 minutes. Stir in corn and black beans.
  3. Season with chili powder, cumin, salt, and pepper. Mix in half of the shredded cheese until melted.
  4. In a bowl, combine cornmeal, milk, eggs, and sour cream; mix until smooth.
  5. Pour half of the cornbread batter into the baking dish. Spread the meat mixture evenly on top and cover with remaining cornbread batter. Sprinkle with remaining cheese.
  6. Bake for 30–35 minutes until golden brown.
