  • 8 oz fettuccine or penne
  • 2 (6 oz) fresh salmon fillets
  • 1 cup heavy cream
  • 3 cloves garlic, minced
  • 2 cups fresh baby spinach
  • 2 tbsp olive oil
  • Juice of 1 lemon
  • ½ cup grated parmesan cheese
  • Salt and pepper to taste

Instructions

  1. In a large pot, bring salted water to a boil and cook the pasta according to package instructions until al dente. Drain and set aside.
  2. Heat olive oil in a skillet over medium heat. Season salmon with salt and pepper, then cook skin-side down for about 4 minutes per side until golden brown and flaky. Remove from skillet.
  3. Add minced garlic to the same skillet and sauté for about 1 minute until fragrant.
  4. Pour in heavy cream, stir in lemon juice and parmesan cheese. Simmer gently until slightly thickened.
  5. Gently fold cooked pasta and spinach into the sauce, breaking up larger salmon pieces as you mix.
  6. Plate the creamy salmon pasta, garnishing with extra parmesan and cracked black pepper if desired.
