Ingredients

Scale
  • 2 ½ cups all-purpose flour
  • 1 cup unsalted butter (cold, cubed)
  • ¾ cup granulated sugar
  • ¾ cup brown sugar
  • 2 tsp ground cinnamon
  • ¼ tsp ground nutmeg
  • 1 tbsp lemon juice (freshly squeezed)
  • 6 cups apples (Granny Smith or Honeycrisp, peeled and sliced)

Instructions

  1. Prepare the crust by mixing flour and a pinch of salt in a bowl. Cut in cold butter until crumbly. Gradually add cold water until dough forms. Wrap and chill for at least 30 minutes.
  2. For the filling, combine sliced apples with granulated sugar, brown sugar, cinnamon, nutmeg, and lemon juice; toss to coat.
  3. Roll out chilled dough into two circles—one for the base and one for the top. Place the bottom crust in a pie pan and fill with apple mixture. Dot with butter before adding the top crust.
  4. Bake at 425°F (220°C) for 15 minutes, then reduce to 350°F (175°C) for an additional 35-40 minutes until golden brown.
  5. Allow to cool slightly before serving; best enjoyed warm with ice cream or whipped cream.
