  • 1 cup all-purpose flour
  • 1/2 cup granulated sugar (for crust)
  • 1/4 cup unsalted butter, chilled and melted
  • 2 large eggs
  • 1 cup granulated sugar (for filling)
  • 1/2 cup fresh lemon juice (about 23 lemons)
  • Zest of 2 lemons
  • 1 tsp baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat oven to 350°F (175°C) and line an 8×8 inch baking dish with parchment paper.
  2. In a bowl, combine melted butter, flour, and ½ cup granulated sugar until crumbly. Press mixture into the bottom of the prepared baking dish.
  3. Bake the crust for about 15 minutes until lightly golden.
  4. In another bowl, whisk together eggs, remaining granulated sugar, lemon juice, lemon zest, and baking powder until smooth.
  5. Pour the lemon filling over the baked crust and return to oven for an additional 20-25 minutes until set with a slight jiggle in the center.
  6. Allow to cool completely before slicing into squares and dusting with powdered sugar.
