Ingredients

Scale
  • 1 lb Sirloin or Ribeye steak
  • 1 lb Baby potatoes, halved
  • 4 cloves Fresh garlic, minced
  • 4 tbsp Unsalted butter
  • 2 tbsp Olive oil (for cooking)
  • 2 sprigs Fresh thyme or rosemary
  • Salt and pepper to taste

Instructions

  1. Prepare your ingredients by washing and halving the baby potatoes. Mince the garlic and set aside.
  2. In a large skillet over medium heat, add olive oil and the halved baby potatoes. Season with salt and pepper, cooking until golden brown and fork-tender (about 15 minutes). Remove from skillet.
  3. In the same skillet, sear the seasoned steak for about 4-5 minutes on each side until browned to your liking.
  4. Add minced garlic and butter to the skillet when the steak is nearly finished cooking. Baste the steak with the melted garlic butter for an additional minute.
  5. Return the cooked potatoes to the skillet along with fresh herbs. Toss gently to combine all flavors.
  6. Serve immediately, garnished with extra herbs if desired.

Keywords: For a healthier twist, substitute olive oil for butter. Feel free to experiment by adding bell peppers or swapping baby potatoes for sweet potatoes for added sweetness and crunch.
