  • 1 bunch fresh asparagus, trimmed

  • Zest of 1 lemon (optional)

Instructions

  1. Preheat oven to 400°F (200°C) and line a baking sheet with parchment paper.
  2. In a bowl, toss halved potatoes with 2 tablespoons olive oil, salt, and pepper until coated. Spread them on the prepared baking sheet.
  3. Scatter whole garlic cloves among the potatoes and roast for 20 minutes.
  4. Meanwhile, toss asparagus with remaining olive oil, salt, and pepper.
  5. After 20 minutes of roasting, add asparagus to the baking sheet and return to the oven for another 10-15 minutes until tender and golden.
