Ingredients

Scale
  • 1 lb lean ground beef
  • 4 large flour tortillas
  • 2 cups shredded cheese (1 cup cheddar, 1 cup mozzarella)
  • 1 medium onion, diced
  • 1 cup bell peppers (mixed colors), diced
  • 2 tsp chili powder
  • 1 tsp cumin
  • 1 tsp garlic powder
  • Salt and pepper to taste
  • Sour cream for serving
  • Salsa for serving

Instructions

  1. Cook the Beef: In a skillet over medium heat, brown the ground beef until no longer pink. Drain excess fat and set aside.
  2. Sauté the Veggies: In the same skillet, add diced onions and bell peppers. Sauté until softened (about 5 minutes).
  3. Mix It Up: Return beef to the skillet with veggies. Stir in chili powder, cumin, garlic powder, salt, and pepper; cook for an additional 2-3 minutes.
  4. Assemble Quesadillas: On one tortilla half, sprinkle cheese, add beef mixture, then top with more cheese before folding.
  5. Cook Until Golden: Heat another skillet over medium heat with a little oil. Cook folded quesadillas until golden brown on both sides (3-4 minutes per side).
  6. Serve hot with sour cream and salsa.
