  • 1 can (28 oz) crushed tomatoes
  • 1 can (15 oz) kidney beans, drained and rinsed
  • 1 medium onion, chopped
  • 3 cloves garlic, minced
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 2 tbsp olive oil
  • 1 bell pepper, chopped (any color)
  • Salt & pepper to taste

Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté chopped onion and bell pepper until tender, about 5 minutes.
  2. Add ground beef and cook until browned, breaking it apart with a wooden spoon.
  3. Stir in minced garlic, chili powder, and cumin; cook for an additional minute until fragrant.
  4. Pour in crushed tomatoes and kidney beans; mix well to combine.
  5. Bring to a boil, then reduce heat to low and let simmer uncovered for at least 30 minutes, stirring occasionally.
  6. Taste and adjust seasoning with salt or more spices as needed.
