  • 1 can (15 oz) black beans, rinsed and drained
  • 1 can (15 oz) sweet corn, drained
  • 1 can (14.5 oz) fire-roasted diced tomatoes
  • 1/2 cup red onion, finely chopped
  • 1/4 cup fresh cilantro, chopped
  • Juice of 2 limes
  • 1 tsp chili powder
  • Salt and pepper to taste

Instructions

  1. Prep the ingredients by rinsing the black beans and corn and chopping the red onion and cilantro.
  2. In a large bowl, mix together the black beans, corn, diced tomatoes, red onion, and cilantro until combined.
  3. Squeeze lime juice over the mixture. Add chili powder along with salt and pepper to taste. Stir well.
  4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes to allow flavors to meld.
  5. Serve chilled with tortilla chips or as a topping on tacos.
