Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8 inch baking dish or line it with parchment paper.
  2. For the crust, mix 1 cup flour and 1/2 cup sugar in a bowl. Cut in cold butter until crumbly, then press into the bottom of the prepared pan.
  3. Bake the crust for 18-20 minutes until lightly golden.
  4. In another bowl, whisk together 2 eggs, 1 cup sugar, lemon juice, zest, and 2 tablespoons flour until smooth.
  5. Pour the filling over the baked crust and return it to the oven for another 20-25 minutes until set.
  6. Allow to cool completely before dusting with powdered sugar and cutting into squares.
