  • 1 cup granulated sugar (divided)
  • 2 large eggs
  • 1/4 cup Meyer lemon juice (freshly squeezed)
  • Zest of 2 Meyer lemons
  • 1/2 tsp baking powder
  • Powdered sugar for dusting

Instructions

  1. Preheat your oven to 350°F (175°C) and grease an 8×8-inch baking dish.
  2. In a mixing bowl, combine melted butter, 1/4 cup granulated sugar, flour, and baking powder until crumbly. Press this mixture into the bottom of the prepared dish.
  3. Bake the crust for about 15 minutes until lightly golden.
  4. While the crust cools, whisk together eggs, remaining granulated sugar, Meyer lemon juice, and zest until smooth.
  5. Pour the filling over the warm crust and bake for another 20-25 minutes until set but slightly jiggly in the center.
  6. Let cool completely before dusting with powdered sugar and cutting into squares.
